WHere is a simplified interpretation of a drink from our latest menu. This is a batch pre-mixed that's packed full of tastes of the festive period, which makes it ideal for your holiday party. Save the extra cordial you can use for breakfast cocktails, sweets, or to mix another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 people
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (yields 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Place every components in a saucepan, bring to a simmer, mixing so the sugar melts. Then, remove from the heat allowing it to cool down entirely. Decant into a sealable bottle, close it and store in the refrigerator, where it will keep for about one month.
For the Cocktail Base: Mix the specified liquid ingredients into one big jug, allow it to infuse for an hour, then filter it preferably using muslin, to ensure it's fully clarified.
For serving: Add 85ml of your batch mix into a cocktail shaker filled with ice, and agitate carefully for a minute to cool it down. Strain into a cold coupe glass or a similar vessel, garnish with some cranberries adding the final touch by giving it a brief mist of mandarin oil above the glass.
